Rhu-Blu Pie Pops

Use the recipe for Cherry Pie Pops on page 171 of Bean Appetit (click here for PDF), but try this filling instead!!

Rhubarb-Blueberry Filling

    • 1/2 cup fresh blueberries
    • 1 1/2 tablespoons minced rhubarb
    • 2 tablespoons brown sugar
    • 1/2 cup water
    • 1 tablespoon melted butter

     

In a small sauté pan, lightly simmer the rhubarb, water and brown sugar until rhubarb is soft, approximately 15-17 minutes. 

Let cool and then fold in fresh blueberries. Your pie filling is ready to go!
