Bean Appetit

Purpl-excellent Slaw

Serves 2

  • 1/2 cup sliced purple cauliflower
  • 1/2 cup Napa cabbage, torn into small pieces
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon brown sugar
  • 2 tablespoons peanut butter
  • Pinch of garlic powder
  • 1 teaspoon sesame oil
  • 1/4 cup shredded carrots

 

Wear as much purple as you can while making this recipe--even purple earmuffs if you have them!

In a mixing bowl (purple, if you have it!), combine peanut butter, sesame oil, garlic, brown sugar and rice wine vinegar.  Add the purple cauliflower, purple cabbage, and carrots to the mixture.  Mix well, until all of the veggies are coated.  Let sit for 10 minutes.

Place the slaw in a purple bowl. Enjoy with a glass of purple grape juice!
