Bok Choy Bundles

Makes ~7 bundles

  • 1 head of baby bok choy, washed
  • 1 cup rotisserie chicken, shredded
  • 1/4 cup corn
  • 1/2 cup spinach, torn
  • 3 teaspoons hummus
  • Pinch of garlic powder
  • Pinch of cumin powder
  • 1/4 cup cooked whole wheat spaghetti noodles
  • 1/4 teaspoon olive oil
  • 1 teaspoon cream cheese


Preheat oven to 400 degrees.

Combine chicken, corn, spinach and hummus in a mixing bowl.  Season with garlic and cumin. 

On a baking tray, lined with parchment paper, lay out leaves of bok choy.  For each leaf, think of a gift you would like to give someone.

Place 1 tablespoon of chicken mixture into the center of the bok choy.  Roll up the bottom part of the bok choy, so it covers the chicken mixture.  Next gently fold in the sides and finish rolling, so you have made a package out of the bok choy. 

Dab with 1 tablespoon of water on top and lightly brush the top with olive oil.

Bake for 10-12 minutes, until hot.  Let cool slightly.

While the bok choy bundles are baking, gently tie your noodles into bows.  Use cream cheese to hold your bow together.  Place bow on top of your Bok Choy Bundle.

Squeal with delight when you take a bite, like you've just unwrapped the best present ever!
