Fine Feathered Filo Nests
Makes 2 nests
- 1/2 cup whole wheat filo dough, thawed
- 12 asparagus spears
- 6-7 small fresh mozzarella balls
- 1/4 cup spinach leaves
- Olive oil, as needed
- Salt and pepper
Preheat the oven to 400 degrees.
Cheep like a bird while using a pizza cutter to slice filo dough into long strips. Drizzle with olive oil and separate into two bunches.
Flap your arms 8 times and then push the two bunches of dough into nest shapes in a muffin tin. Sprinkle with salt and pepper.
Place asparagus on a baking sheet and bake both the asparagus and filo nests for 12-15 minutes or until nests are golden brown. Let cool.
Place asparagus spears on two plates to look like twigs and gently lie the one nest on each plate. Fill the nests with small mozzarella balls, and place spinach leaves around twigs for leaves.
